Great Olive Oil Recipe From Eugene Pallisco

It is surprising to see how many recipes, regardless of nationality or origin, contain Olive Oil as a foundational ingredient.  Stewed Moroccan Chicken is an unbelievable recipe that both uses olive oil and that your family will enjoy.  Here is how to make it:

Ingredients

1/4 cup olive oil
3/12 - 4 lbs. chicken cut up
1 med onion thinly sliced
2 cloves garlic crushed
3/4 cup chicken broth
1/2 tsp coriander
1/2 tsp cinnamon
1/2 tsp paprika
1/2 tsp cumin
1 tsp ground ginger
1/2 tsp pepper
1/4 tsp cayenne pepper
1 tblsp splenda
1 tblsp tomato paste
1 tsp salt or vege salt

Cooking Instructions:

Heat oil in dutch oven on medium heat.  Brown chicken.  Remove fat and put chicken back into dutch oven.  Scatter onion and garlic over chicken.  Combine all other ingredients together and pour over the chicken.  Cover and place on low heat to simmer for 45 minutes - 1 hour.  Uncover, and let simmer for an additional 15 minutes.  Cool before serving.
